Homemade Savory Bar Nuts


 
 

Of all of the more superfluous things to be missing during quarantine, sitting at a bar with friends and eating snacks is definitely near the top. We’ve been dreaming of the day when we can gather with our favorite people around a bowl of too-salty bar nuts, talking about how they are too salty and mediocre but ultimately finishing the bowl and asking for more. So what did we do to make our dreams a reality? Created our own version of our ideal bar nut mix of course!

This mixture has everything we’re looking for from a savory snack: it’s salty, tangy, includes nuts AND pretzels and the sprinkle of nutritional yeast has the deceptively delicious satisfaction of fake cheese dust we love. Feel free to mix and match the nuts with ones you have one hand, add other tasty bites to the mix, or dare we suggest it, add cut up pepperoni sticks to the final expression? Ingredients

  • 2 Tbsp butter, melted

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • 1/2 tsp paprika (smoked paprika could work well here too!)

  • 1/2 tsp dijon mustard

  • 3/4 tsp kosher salt

  • 1 1/2 cups pretzels, nuts and seeds (we used pretzels, cashews, almonds and peanuts)

  • 1 Tbsp fine nutritional yeast (you can also use large flake if that’s what you have on hand)

 

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a medium sized bowl, mix together melted butter, onion and garlic powders, paprika, dijon and salt until combined. Add nuts and pretzels to bowl and toss to coat everything in the butter mixture. Place nut mixture on lined sheet tray or cast iron, spreading everything out evenly, and put them into the oven for 15-20 minutes. Check them at 15 minutes and leave them in for another fews minutes if they need more toast time. They should be lightly golden and start smelling toasted. Be careful not to burn your nuts!

  3. Remove tray from oven and sprinkle the nutritional yeast over everything while they are still hot and oily—be sure to stir and make sure all of the nuts and pretzels get dusted.

  4. Move nut mix to a bowl for serving and enjoy with your favorite happy hour beverage.

    Makes 1.5 cups of nut mix
